My Favorite Oatmeal Cookie

3/4 cup all-purpose flour 1/2 teaspoon baking soda 1/8 teaspoon salt 1/2 teaspoon cinnamon1/16 teaspoon nutmeg1/16 teaspoon ginger 1/2 cup butter (at room temperature) 1/2 cup granulated sugar 1/2 cup light-brown sugar (packed)1 large egg (at room temperature)1 teaspoon vanilla extract1 1/2 cups quick-cooking oats (don't use instant oatmeal)1 cup raisins (or other dried fruit, chopped) 1/2 cup walnuts, chopped (or pecans or macadamias)1 cup white chocolate chips, melted (optional)Food color (optional)Heat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper.Mix flour, baking soda, salt, cinnamon, nutmeg and ginger; set aside.Beat butter, sugars with electric mixer until fluffy. Add egg and vanilla and beat until well-combined. Stir in the flour mixture. Stir in oats, then raisins and then nuts. Drop dough (around a tablespoonful) onto the cookie sheet, leaving 2 inches between each cookie (the cookies will spread). Press dough lightly with fingers to flatten slightly. Bake 8-10 minutes until brown on the edges. Cool on a wire rack.Melt the white-chocolate chips and tint with food color.
