Margarita Fajitas
4 boneless skinless chicken breasts 1/2 cup of tequila4 limes, divided2 tablespoons flavored cooking oil 1/4 teaspoon salt 1/4 teaspoon black pepper1 can (15 ounces) black beans 1/4 cup red onion, chopped2 canned jalapeno peppers, seeded and finely chopped2 canned whole chipotle peppers, finely chopped 1/8 teaspoon salt1 can (11 ounces) mandarin oranges4 large flour tortillasPlace chicken breasts between wax paper and pound to flatten.In a non-reactive bowl, combine tequila, juice of 3 limes, oil, salt and pepper. Place chicken in marinade, cover and refrigerate for at least 1 hour.In another bowl, combine black beans, red onion, jalapeno peppers, chipotle peppers, salt, and juice of 1 lime.Preheat grill.Grill chicken until juices run clear and meat is no longer pink inside. Grill tortillas just long enough to get grill marks, about 1 to 2 minutes on each side.Cut chicken into strips about 1/2-inch thick. Place black bean mixture evenly in tortillas. Place 1 chicken breast in each tortilla.
