Easy Delish Fish Dish
2 large tomatoesSalt and pepper to taste 3/4 cup fresh white bread crumbs1 pound thin fish fillets such as soleDried parsley flakes 1/2 cup dry white wine 1/4 cup butter1 tablespoon lemon juice 1/2 cup freshly grated parmesan cheesePaprikaHeat oven to 350 degrees. Spray large, shallow baking dish with cooking oil or butter lightly.Slice tomatoes about 1/4-inch think and arrange to cover bottom of dish. Salt and pepper lightly. Sprinkle bread crumbs over tomatoes and then layer fish on top of bread crumbs. Sprinkle with salt, pepper and parsley flakes.In a small saucepan combine wine, butter and lemon juice. Heat until butter melts. Pour over fish. Sprinkle with parmesan cheese and paprika.
