Orzo with Fresh Basil and Parmesan
2 1/2 tablespoons butter1 cup orzo1 can (14 1/2ounces) chicken broth or 1 3/4 cups water and 2 chicken bouillon cubes 1/3- 1/2 cup grated parmesan cheese 1/4 cup fresh basil, chopped plus additional for garnishSalt and pepper to tasteMelt butter in a large skillet, add orzo and stir until golden brown. Stir in chicken broth, bring to a boil, reduce heat and simmer till orzo is tender and liquid is absorbed, 15-20 minutes.Stir in parmesan cheese and fresh basil. Turn into serving bowl and garnish with fresh basil sprigs.Serves six.Nutrition values per serving: 221 calories, 8 g fat (4 g saturated), 29 g carbohydrates, 1 g fiber, 8 g protein, 19 mg cholesterol, 408 mg sodium.
