Kim?s Spiced Banana Bread
1 1/2 cups flour1 1/2 teaspoons baking powder ?1/4 tea-spoon baking soda 2 heaping tablespoons ground cin-namon 1 teaspoon ground ginger 1 tea-spoon ground cloves 1 egg 1 cup mashed banana (3 medium) ¾ cup sugar 1/4 cup vegetable oil Dash of salt (optional) Vanilla icing 2 cups confectioners? sugar, sifted 2 teaspoons vanilla extract1-2 tablespoons milkHeat oven to 350 de-grees. Grease bottom and sides of 4-by-8-inch loaf pan.Whisk together flour, baking powder, soda, cinnamon, ginger and cloves.In a separate bowl combine egg, bananas, sugar, oil and salt if desired. Stir just until all ingredients are moist. Batter will be lumpy. Spoon batter into pan. Bake 50 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack 10 minutes; remove from pan and cool 10 more minutes.While the bread cools, make the icing. Stir vanilla into confectioner?s sugar in a micro-wave-safe bowl. Add milk, 1 teaspoon at a time, stirring until mixture is the consistency of thick frosting. Heat in microwave on ?warm? setting in 15-second increments, stirring each time, until mixture can just be poured.
