Carrie's Empanadas

1 1/2 teaspoons olive oil1 pound ground beef1 pound turkey sausage1 large white or yellow onion, chopped4 cloves garlic, finely chopped1 green pepper, diced 1/2 teaspoon ground cumin 1/2 teaspoon paprika 1/2 teaspoon dried oregano, crushedSalt and pepper to taste2 chile peppers, chopped (or to taste) 1/2 cup crushed tomatoes, canned or fresh 1/4 cup raisins 1/4 cup green olives, chopped 1/4 cup fresh parsley, chopped 1/4 cup baby carrots, finely chopped2 packages (2, 9-inch pieces each) ready-made pie crustsEgg wash (beaten egg and bit of water)Heat oven to 425 degrees.Heat oil in a large fry pan and brown the ground beef and drain; set aside.In the same pan, cook turkey sausage until browned. Remove from pan, chop into bite-sized pieces. Return sausage and ground beef to pan, add onion, garlic, green pepper, cumin, paprika, oregano, chile peppers, tomatoes, raisins, olives, parsley and carrots. Stir well, season with salt and pepper. Simmer 10-15 minutes and let cool.Cut each pie crust in half to form semicircles. Using an ice cream scoop divide mixture among the eight pieces of crust, placing it on half of the crust. Brush the edges of the pastry with the egg wash, fold over crust and press edges to seal. Place on baking sheet and prick once or twice with a fork to allow steam to escape. Bake 15-20 minutes or until golden brown.Serves eight.Nutrition values per serving: 565 calories, 35 g fat (12 g saturated), 41 g carbohydrates, 2 g fiber, 23 g protein, 82 mg cholesterol, 1,174 mg sodium.
