Fresh Pizza Sauce

12-15 large, fresh tomatoes1 medium onion or 2 leeks, diced1 green, yellow or red pepper, diced3-4 cloves garlic, minced1 teaspoon sugarSalt and pepper to taste2-3 tablespoons olive oil 1/2 cup balsamic vinegar or full-bodied wine 1/2 cup basil, chopped 1/4 cup fresh oregano, chopped Bring a pot of water to a boil and add tomatoes, blanching them 15-20 seconds. Peel skin. Cut in half, remove seed, then cut into 3/4-inch chunks and place in saucepan.Place pan over low heat and add onion or leeks, pepper, garlic, sugar, salt and pepper. Stir in olive oil and let sauce simmer gently 2 hours uncovered.Add vinegar or wine and fresh herbs. Simmer gently 1 more hour.Makes enough sauce for 3 pizzas. Nutrition values per serving: 319 calories, 12 g fat (2 g saturated), 53 g carbohydrates, 10 g fiber, 8 g protein, 0 cholesterol, 84 mg sodium.
