Green Beans Paprika
1 pound frozen or fresh green beans1 tablespoon butter1 tablespoon flour 2/3 cup half-and-half 1/8 teaspoon black or white pepper 2/3 teaspoon Hungarian hot paprikaBlanch green beans in water or white wine until quite tender. Season with salt and set aside.Melt butter in saucepan and whisk in flour, cooking gently until mixture loses its floury taste. Slowly add half-and-half, whisking to blend. Cook over low heat, stirring until sauce thickens. Add pepper and paprika. Pour sauce over green beans and serve immediately.Serves six to eight.Nutrition values per serving: 69 calories, 4 g fat (3 g saturated), 6 g carbohydrates, 2 g fiber, 2 g protein, 13 mg cholesterol, 14 mg sodium.
