Pepparkakor - Swedish Ginger Cookies
1 1/2 sticks (3/4 cups) unsalted butter, room temperature
1 cup granulated sugar
1/2 cup dark corn syrup
3/4 tablespoon ground ginger
3/4 tablespoon ground cardamom
3/4 tablespoon ground cinnamon
1/2 tablespoon ground cloves
3/4 cup lightly whipped cream
tablespoon baking soda 4 1/2 cups unbleached flour
In a large bowl, cream the butter and sugar together with the dark corn syrup and spices. Add the lightly whipped cream and blend well.
Into a separate bowl, sift the baking soda with 4 cups of flour and add to the creamed mixture, mixing well. Gradually add the remaining ยจ cup flour and mix until well combined.
Turn the dough onto a lightly floured surface and knead until smooth. Refrigerate overnight.
Heat oven to 400 degrees.
Roll out part of the dough as thin as possible. Cut into desired shapes, place on parchment lined baking sheets and bake 5 to 7 minutes or until beautifully brown. Remove to cooking rack.
Makes 150-200 cookies.
