La Brea Tar Pit Chicken Wings

4 pounds chicken wings, split at the joint and wing tips discarded1 cup soy sauce (Kikkoman preferred) 1/2 cup dry red wine 1/2 cup plus 1 tablespoon sugar 1/4 teaspoon gingerPlace a rack in the center of the oven and heat to 400 degrees.Arrange the wings in a single layer in a large roasting pan.Combine the soy sauce, red wine, sugar and ginger in a small saucepan and stir over medium-low heat until the sugar is dissolved. Pour evenly over wings.Bake for 45 minutes. Turn the wings over and bake until the sauce is thick and sticky, about 1 hour more or a little longer. Serve hot with plenty of napkins.Serves 12.Cook's note: If you can find a drummettes, a chicken wing's first joint, the prep time will be cut to 5 minutes.Nutrition values per wing (skin removed): 48 calories(18.7 percent from fat), 1 g fat (0.3 g saturated fat), 2 g carbohydrate, 0 fiber, 6.3 g protein, 17 mg cholesterol, 287 mg sodium.
