Raisin Squares

2 cups raisins1 1/4 cups water 2/3 cup softened butter1 3/4 cups sugar2 eggs1 teaspoon vanilla3 cups all-purpose flourPinch of salt2 teaspoons cinnamon1 teaspoon baking sodaGlaze1 cup powdered sugar 1/2 teaspoon cinnamon3 tablespoons milkHeat oven to 350 degrees. Grease and flour a jelly roll pan; set aside.In small saucepan, simmer raisins and water for about five minutes. Drain, reserving liquid. Allow raisins to cool.In large bowl, whip butter until creamy. Add sugar and beat until fluffy. Add eggs and mix well; stir in vanilla.In medium bowl, mix flour, salt and cinnamon. Dissolve baking soda in 1 cup reserved water from raisins and gradually add it to the flour mixture, stirring well after each addition. Add raisins and mix well.Spread mixture in prepared pan. Bake for about 20 minutes or until toothpick inserted into center comes out clean. Cool in pan 15-20 minutes.For the glaze: Mix powdered sugar and cinnamon in a small bowl, add milk and stir until smooth. Spread glaze on cooled cake and cut into squares.Serves 18.Nutrition values per serving: 299 calories, 8 g fat (5 g saturated), 56 g carbohydrates, 1 g fiber, 4 g protein, 42 mg cholesterol, 98 mg sodium.
