Plum Spice Cake
1 cup canola oil3 eggs2 cups self-rising flour2 cups sugar1 teaspoon nutmeg1 teaspoon allspice1 teaspoon cinnamon2 jars (4 ounces each) plum baby foodHeat oven to 350 degrees. Grease and flour a tube pan.In large mixing bowl combine oil and eggs. Add flour, sugar, nutmeg, allspice, cinnamon and plum puree; beat 1 minute.Pour into prepared pan and bake about 45 minutes or until toothpick inserted in cake comes out clean. Cool in pan on wire rack for 10 minutes. Remove and cool completely on wire rack.Serves 12.Nutrition values per serving: 403 calories, 20 g fat (2 g saturated), 54 g carbohydrates, 1 g fiber, 4 g protein, 53 mg cholesterol, 282 mg sodium.
