Tombstone Cupcakes
Cupcakes1 1/2 cups all-purpose flour 1/2 cup cocoa powder1 1/2 teaspoons baking powder 1/4 teaspoon baking soda 3/4 cup miniature chocolate chips 3/4 cup unsalted butter, softened1 1/4 cups brown sugar, firmly packed2 large eggs 3/4 cup orange juice 1/4 cup milkFrosting and garnish3 cups powdered sugar 1/2 cup unsalted butter, softened 1/4 cup orange juice2 teaspoons milk9 Pepperidge Farm Orange Milano cookiesColored sugar sprinkles, decorHeat oven to 350 degrees; line 18 muffin tins with Halloween-themed cupcake liners or use foil liners. Set aside.For the cupcakes: In a medium bowl, stir together flour, cocoa, baking powder, baking soda and mini chips. Set aside.In large bowl with mixer on medium speed, beat butter and brown sugar for 30 seconds. Add eggs and beat 2 minutes on medium speed until light and fluffy. Scrape bowl well.In small bowl, stir together 3/4 cup orange juice and 1/4 cup milk. Add half flour mixture and half liquid mixture to creamed ingredients; beat 30 seconds on low speed. Scrape bowl well. Add remaining flour and liquid mixtures and beat on medium speed 1 1/2 minutes until light and fluffy. Scrape bowl well.Spoon into lined muffin cups and bake 20 minutes until top springs back lightly when touched. Cool 20 minutes in pans. Remove and cool 20 minutes on racks.For frosting and garnish: In medium bowl, beat powdered sugar, butter and orange juice until smooth. Add milk and beat on high until light and fluffy. Add more milk as needed. Reserve 1/4 cup frosting into small bowl.Cut each cookie in half to create small tombstone shapes. Color 1/4 cup frosting with black food color and use this to write desired messages on tombstone cookies; set aside.Frost cupcakes with white frosting and place 1 tombstone cookie on top of each cupcake. Sprinkle festive Halloween colored sugar or decorations around base of tombstone cookies.Serves 18.Baker's hint: For a spook-tacular party presentation, create a "cemetery" centerpiece.
