Quick Pickled Cucumbers
1 English cucumber1 tablespoon distilled white vinegar2 teaspoons sugar2 teaspoons chopped fresh dill1 teaspoon coarse saltCut cucumber crosswise into three equal pieces; cut each piece lengthwise into eighths.In a large bowl, whisk together vinegar, sugar, dill and 1 teaspoon salt. Add cucumber spears; toss to coat.
