Spiced Peanut Refrigerator Cookies

1/2 cup unsalted butter, softened 1/2 teaspoon ground allspice 1/2 cup sugar1 large egg yolk1 teaspoon vanilla extract1 cup all-purpose flour 1/3 cup peanuts, coarsely choppedIn medium bowl, beat butter, allspice and sugar on medium speed until smooth. Add egg yolk and vanilla. Beat 30 seconds, scraping bowl well. Add flour and mix on low speed just until combined.Using hand scraper or hands, press dough together to form ball. Cover and chill 10 minutes. Roll dough ball into log, 1 1/2 inches wide and about 12 inches long. Cover with plastic wrap and chill 4 hours or overnight.To bake: Heat oven to 350 degrees.Warm dough at room temperature for 10 minutes. Line baking sheet with parchment paper or foil. Slice dough at 1/2-inch intervals. Place cookie slices 1 1/2 inches part on baking sheet. Sprinkle with chopped peanuts. Before baking, gently press peanuts into dough.Bake 10-12 minutes until light brown on top and golden brown at edges. Cool 10 minutes before removing from pan. Store tightly covered.*Baker's hint: This recipe tested well in s toaster oven set at 350 degrees. Bake just 8-10 minutes and watch carefully. Cookie dough can be frozen tightly wrapped for 3 months.
