Sloppy Josephines

1 tablespoon olive oil 1/4 cup finely chopped onion 1/2 cup chopped red bell pepper2 cups ground portobello mushroomsSalt and freshly ground black pepper1 package (12 ounces) frozen vegetarian burgers, thawed and chopped, or equal amount vegetarian "ground beef" 3/4 cup tomato sauce1 teaspoon yellow or Dijon mustard 1/2 teaspoon agave syrup or a pinch of stevia (sweetener)Heat the oil in a large skillet over a medium-high flame. Add the onion and bell pepper, cover and cook until the vegetables are soft, about 5 minutes.Add the mushrooms and season with salt and pepper, to taste. Cook 3 minutes, stirring occasionally.Stir in the vegetarian burgers, tomato sauce, mustard and sweetener.
