The ultimate burger

For the burgers: Place the chilled meat in a large bowl; add the onion, garlic, parsley, mustard and Worcestershire sauce. Add the egg yolk and seasoning, and mix thoroughly. Refrigerate 1 hour.

Using wet hands, shape into 4 evenly sized burgers.

Heat a grill or grill pan until smoking hot.

Brush the burgers with a little oil, place on the grill and cook for 3 to 4 minutes on each side until well browned, but still pink in the center.

For the sauce: Whisk the sour cream, horseradish and chive together; refrigerate until ready to serve.

Serve the burgers in the toasted buns, spread with Horseradish and Sour Cream Chive Sauce and other condiments.

Serves four.
