1 pound rotini, cooked and drained 2 pints grape tomatoes, halved 1 small green pepper, diced 1 small red pepper, diced 1 small yellow pepper, diced 1 pound cheddar cheese, cubed 2 bunches green onions, diced 3 ounces pepperoni, thinly sliced 15 ounces medium black olives Dressing3/4 cup vegetable oil2/3 cup grated parmesan ½ cup red wine vinegar 2 teaspoons dried oregano 1 teaspoon garlic powder 1 teaspoon salt ¼ teaspoon pepperIn a large bowl combine pasta, tomatoes, peppers, cheddar, green onions, black olives and pepperoni.In a small bowl combine whisk together oil, parmesan, vinegar, oregano, garlic powder, salt and pepper. Pour over salad ingredients and toss to coat. Cover and refrigerate several hours or overnight.Serves eight as main course, 16 as a side.Nutrition values per serving: 322 calories, 25 g fat (9 g saturated), 13 g carbohydrates, 2 g fiber, 12 g protein, 37 mg cholesterol, 640 mg sodium.
