Strawberry Salad with Raspberry Vinaigrette
Vinaigrette ½ - ¾ cup sugar (to taste) 1 teaspoon salt 1 teaspoon Dijon mustard 1/3 cup raspberry vinegar 1 tablespoon poppy seeds 1 cup corn oil1 1/2 tablespoons onion, finely chopped Salad 1 head red leaf lettuce, torn into bite-size pieces ¼ pound mushrooms, sliced¾ pint strawberries, sliced ¼ red onion, sliced into ringsFor the vinaigrette: Combine sugar, salt, mustard and vinegar in sealed container, shake vigorously until well blended. Add poppy seeds, oil and onion, shake vigorously until well blended. Chill until ready to serve.In a large bowl, combine lettuce, mushrooms, strawberries and onion. Toss with vinai-grette.
