Sweet Potato Walnut Waffles
3 large eggs, beaten1 1/2 cups low-fat milk 1/2 cup mashed sweet potatoes 1 tablespoon canola oil 1 teaspoon vanilla extract 1 cup all-purpose flour 1/2 cup whole wheat flour 1/2 cup walnuts, finely chopped 2 teaspoons baking powder 3/4 teaspoon ground cinnamon 1/4 teaspoon salt Pure maple syrupHeat the waffle iron according to the manufacturer?s instructions.Whisk together the eggs and milk in a medium bowl. Add the sweet potatoes, canola oil and vanilla and stir to combine.Combine the all-purpose flour, whole-wheat flour, walnuts, baking powder, cinnamon and salt in a large bowl. Add the egg mixture to the dry ingredients and stir until just moistened.Coat the hot waffle iron with nonstick cooking spray. Pour the batter onto the hot waffle iron to cover about two-thirds of the grid surface. Cook according to the manufacturer?s instructions. The waffles may need to cook for an additional minute due to the added sweet potatoes. Repeat with the remaining batter.
