Almost-Guiltless Avocado Dip
2 large garlic cloves, peeled 2 firm-ripe California (Haas) avocados, quartered, pits removed and peeled 1 pint fat-free sour cream frac14; cup plus 2 tablespoons fresh-squeezed lime juice2uml; teaspoons salt 1 teaspoon fresh-ground black pepper 2 tablespoons chopped fresh cilantro leavesWith a blender or food processor running, drop the garlic cloves, one at a time, through the top access to mince. Turn off blender. Add avocado, sour cream, lime juice, salt and pepper and blend until smooth.Pour dip into serving bowl and serve immediately dusting the top with the cilantro. Or, cover with plastic wrap and chill until ready to use and then dust with the minced cilantro. (Can be made a day ahead and kept covered and chilled).Makes about 4 cups.LeanNote: Jicama, peeled and cut into finger-sized pieces using a French fry cutter, go really well with this dip.Nutrition values per tablespoon: 19 calories (44.5 percent from fat), 0.9 g fat (0.1 g saturated fat, 0.5 g monounsaturated fat), 2.1 g carbohydrates, 0.4 g fiber, 0.6 g protein, 1 mg cholesterol, 98 mg so-dium.
