Chip & Dip Cookie
1 cup (2 sticks) butter ½ cup sugar1 1/2 cups flour 1 teaspoon vanilla 1 cup crushed potato chips 2 cups semisweet chocolate chips, melted, or to taste 1 cup mixed nuts, chopped, or to tasteHeat oven to 350 degrees. Line cookie sheets with parchment paper.In a large bowl, cream together butter and sugar. Add flour, vanilla and potato chips, mix until well-combined.Drop by teaspoonfuls on parchment paper lined baking sheets. Bake for about 15 minutes until edges are slightly brown. Remove from oven, cool on baking racks.Once cool, dip half the cookie into melted chocolate, then double dip into nut topping. Return to parchment paper to set.Makes about three dozen.Nutrition values per serving: 153 calories, 11 g fat, 14 g carbohydrates, 1 g fiber, 2 g protein, 14 mg cholesterol, 37 mg sodium.Cook?s note: I use Cape Cod Kettle-Cooked 40-percent Reduced Fat Potato Chips.
