"My Hero" Portobello Sandwich
1/2 cup coarsely chopped, roasted, red bell peppers (from a jar, drained)
1/4 cup mayonnaise
2 hero or club rolls
4 ounces Brie or fresh mozzarella, sliced 1/4-inch thick, at room temperature
4 medium-large (3 1/2-inch in diameter) portobello mushrooms, grilled or roasted
2 cups shredded, mixed lettuce (such as a combination of romaine, radicchio, Bibb or iceberg)
Stir the peppers and mayonnaise together in a small bowl. Open the rolls without completely splitting them in half. Spread the mayonnaise mixture evenly over both halves of both rolls. Arrange cheese to cover half of each roll.
Slice the mushrooms, and arrange them to cover the cheese.
Arrange the lettuce over the mushrooms, close the sandwiches, and serve.
Serves two.
