Vodka Sauce
Vodka Sauce
2 tablespoons olive oil
1/2 small onion, minced
2 ounces prosciutto, chopped
2 ounces vodka
1 cup canned Italian peeled tomatoes or chopped, fresh tomatoes
Salt and pepper to taste
Chopped fresh basil to taste
1/4 cup Parmesan
1/2 cup half and half
4 ounces pasta, any kind, cooked
In a fry pan heat the olive oil and sauté the onions and prosciutto. When onions become transparent add the vodka. Simmer until alcohol evaporates, about 3 minutes.
Add tomatoes, salt, pepper and basil. Simmer for 10 minutes.
Add Parmesan and half and half. Simmer for 12 minutes more. Serve over pasta.
Serves two.
