Ginger-Orange Pomegranate Relish

Ginger-Orange Pomegranate Relish
Seeds of 2 medium pomegranates (about 1 1/2 cups)
1 tablespoon finely chopped orange zest
1 tablespoon orange juice
1/2 tablespoon grated fresh ginger
1 tablespoon honey
1/2 teaspoon salt
Gently mix all ingredients together. Cover with plastic wrap and refrigerate until serving.
Makes 1 1/2 cups.
Cook's note: This relish is excellent served over turkey, pork or lamb.
