Caramelized Fennel and Onions

2 tablespoons butter

1 tablespoon olive oil

2 bulbs of fresh fennel cut into quarter-inch strips with stems removed

1 large onion cut into quarter-inch strips

1 teaspoon adobo seasoning

2 teaspoons sugar

Place butter and olive oil in frying pan and heat until liquefied. Add fennel and stir until coated with butter and oil. Cook about 15 minutes. Add the onions to the pan. Stir and allow to cook on medium flame another 15-20 minutes. Add adobo seasoning and sugar. Stir the vegetables often until they turn a golden brown color.
