Summer Cabbage Delight

1 large head of white cabbage

1 small head of purple cabbage

2 large carrots

1 small bundle of scallions

1½ teaspoons of garlic powder

1 teaspoon of kosher salt

1 teaspoon pepper

Juice of one large lemon, squeezed

½ cup olive oil

2 to 3 medium size tomatoes (optional)

Wash the cabbage cut in half, and thinly slice. Place in a large bowl.

Wash and peel the carrots with a potato peeler. Add to bowl with the cabbage.

Wash and clean the scallion, finely chop and add to the mix.

Wash and quarter tomatoes and add to the salad.

Toss the salad with the olive oil, juice of a lemon, garlic powder, salt and pepper.

Serves 4-6 people
