Goat Cheese and Pistachio Spread
1 package (11 ounces) goat cheese, at room temperature
1 stick unsalted butter, softened
1 large garlic glove, minced and mashed into a paste with 1 teaspoon salt
¼ cup pistachio nuts, toasted and cooled
¼ cup chives, chopped (reserve some for garnish)
Put cheese, butter and garlic paste in a large bowl and with an electric mixer, blend until well combined. Stir in the pistachios and chives. Transfer to a serving bowl and garnish with reserved chives. Serve with toasted French bread slices or crackers.
Makes about 1 cup.
Cook's note: This can be made ahead and refrigerated. Bring spread to room temperature before serving.
