Italian Wine Cookies

2 cups muscatel or any sweet white wine

1 cup oil

½ cup sugar

1 teaspoons salt

2 teaspoons cinnamon

5-6 cups flour

Glaze

½ cup honey

½ tablespoon sweet white wine

In a large pot over high heat boil wine and oil for 15 minutes. Remove from heat and stir in sugar, salt and cinnamon until sugar is dissolved.Gradually add flour 1 cup at a time until dough holds together and is not too sticky.Pull off chunks of dough and roll into a rope about 2 inches in diameter. Cut into pieces about the size of a golf ball. Roll each piece along a small washboard or potato masher to create grooves.Heat oil in a deep pot to 375 degrees. Fry cookies 4 minutes. Lay cookies on paper towel and let cool 10 minutes.For the glaze (optional): Heat honey and wine in small saucepan until warm. Brush cooled cookies with honey mixture, if desired.Once cooled, store in an airtight containerMakes 4frac12; dozen.
