Strawberry Marshmallows
1 cup water3 envelopes (.25 ounces each) unflavored gelatin2 cups sugar#8532; cup light corn syrup#188; teaspoon salt1 tablespoon strawberry extractConfectioners sugarCoat bottom and sides of 8-inch square pan with vegetable spray; dust with confectioners sugar.In large stainless steel bowl combine 1/2 cup water with the gelatin; stir gently and set aside.In heavy bottomed, large pot, combine the remaining water, sugar, corn syrup and salt. Over medium heat, with a wooden spoon, stir until mixture comes to a boil. Leave on heat for 5 minutes more. Add the hot sugar mixture to the gelatin and beat with an electric mixer for 12 minutes. Add the strawberry extract and continue to mix until well combined. Pour mixture into pan and smooth the top. Dust with confectioners sugar and leave uncovered, at room temperature, for at least 8 hours. Remove marshmallow from pan and cut with a hot knife into 1-inch squares. Roll each in confectioners sugar to coat.Makes 64 pieces.
