Asparagus Patties

2 cans (10 ounces each) asparagus

2 tablespoons flour

4-5 eggs

Salt and pepper

Garlic powder, to taste

¼ cup grated Italian cheese

Drain asparagus really well by squeezing. Coarsely chop, then transfer to a medium bowl and mash well. Add about 2 tablespoons flour and mix well.In a large bowl, beat eggs with salt, pepper, garlic powder and a little grated cheese. Add asparagus to egg mixture and mix well; mixture should be fairly thick.Heat oil in a skillet. Form asparagus mixture into about 4-inch patties and drop into oil. Fry until golden brown on both sides. Set on a paper towel-lined plate to drain.Serves 12.Cook#146;s note: Instead of canned asparagus, use 1 pound fresh and cooked until it#146;s very soft.
