Mashed Potatoes and Parsnips

2 pounds Yukon gold potatoes, peeled, cut in chunks#189; pound parsnips, peeled and cut into chunks#189; cup milk3-4 tablespoons unsalted butter#188; cup fresh chives, mincedBoil potatoes and parsnips in salted water until tender, 12-15 minutes. Drain; return to pot. Let stand several minutes to dry.Add milk and butter to pot and mash to desired consistency. Stir in chives.Serves six to eight.
