Easy Vegetable Soup
46 ounces vegetable juice46 ounces water5 beef bouillon cubes1 large rib celery, sliced1 onion, minced1 red potato, unpeeled, cubed 3 carrots, diced1 pound ground beef, browned and drained (optional)1 star anise (optional)2 teaspoons dried Italian seasoning blend or choice of thyme, oregano or marjoram (see note)1 cup chopped broccoli 1/2 cup uncooked pasta, rice or noodlesIn stock pot mix vegetable juice, water and bouillon cubes; bring to boil. Add celery, onion, potato, carrots, beef and star anise. Reduce heat and simmer uncovered for 20 minutes.Add seasoning, broccoli and choice of pasta, rice or noodles.
