Easy Vegetable Soup

46 ounces vegetable juice46 ounces water5 beef bouillon cubes1 large rib celery, sliced1 onion, minced1 red potato, unpeeled, cubed 3 carrots, diced1 pound ground beef, browned and drained (optional)1 star anise (optional)2 teaspoons dried Italian seasoning blend or choice of thyme, oregano or marjoram (see note)1 cup chopped broccoli 1/2 cup uncooked pasta, rice or noodlesIn stock pot mix vegetable juice, water and bouillon cubes; bring to boil. Add celery, onion, potato, carrots, beef and star anise. Reduce heat and simmer uncovered for 20 minutes.Add seasoning, broccoli and choice of pasta, rice or noodles. Simmer until tender.Serves 24 (1-cup servings).Cook's note: If using fresh herbs use 1 to 2 tablespoons total seasoning.Nutrition values per serving: 80 calories, 3 g fat (1 g saturated), 7 g carbohydrates, 1 g fiber, 5 g protein, 13 mg cholesterol, 446 mg sodium.
