Leek Salad
1 tablespoon old-fashioned grainy mustard2 ounces balsamic vinegar4 ounces grapeseed oilSalt and pepper to taste4 ounces blue cheese, crumbled1 leek, white part mostly, cut in fourths lengthwiseSalt and pepperIn a small bowl, whisk together mustard and oil. Add salt and pepper to taste. Whisk in crumbled blue cheese.Steam the leek about 10-15 minutes, or until tender. Season with salt and pepper to taste.
