Sunflower Broccoli Slaw

2 packages (3 ounces each) chicken-flavored ramen noodles12 -16 ounces broccoli coleslaw mix2 bunches green onions, white and light green tops, chopped2-3 cups shredded, cooked chicken1 1/2 cups sunflower seeds 1/2 cup sunflower oil 1/2 cup rice wine vinegar 1/3 cup sugarRemove seasoning packets from ramen noodles and set aside.Add noodles to a large bowl and crush with the palm of your hand. Add slaw, onions, chicken and sunflower seeds and toss to combine.To a medium jar with a tight-fitting lid, add oil, vinegar, sugar and seasoning from 1 flavor packet, or more to taste; shake to combine. Pour dressing over salad and toss.Serves eight to 10.Nutrition values per serving: 390 calories, 28 g fat (3 g saturated), 24 g carbohydrates, 5 g fiber, 17 g protein, 25 mg cholesterol, 473 mg sodium.Deborah Pankey
