Gazpacho

1 large green pepper, seeded

2 large tomatoes, peeled and seeded

½

cup mixed herbs, such as parsley, basil and chives, or your choice

2 cloves garlic, minced

3 tablespoons olive oil

2 tablespoons balsamic vinegar or lemon juice or lime juice

2 cups tomato juice

1 small onion, very thinly sliced

1 medium cucumber, peeled, seeded and grated

Salt to taste

Chop finely the green pepper, tomatoes, herbs and garlic and combine in a large bowl. Stir in olive oil, vinegar and tomato juice. Add onion and cucumber and stir gently to combine. Chill at least 2 hours before serving. Serve cold.

Serves four.
