Black Bean Breakfast Pizza

2 flour tortillas (10-inch size)2 1/2 tablespoons butter, divided 1/3 cup chopped onions2 green onions, chopped, reserve 1 tablespoon1 can (15 ounces) black beans, drained 1/2 cup salsa plus additional for serving1 medium tomato, diced2 whole canned chiles, chopped7 eggsSalt and pepper to taste 1/2 teaspoon Mexican seasoning blend6-8 ounces shredded sharp cheddarSour cream for garnishHeat oven to 375 degrees.Spray a large, fry pan with cooking spray and brown the tortillas on both sides, 1 to 2 minutes each side. Place each on a jelly roll pan.Melt 2 tablespoons butter in the same pan and saute the onions and green onions. Add black beans, mashing with fork or potato masher and cooking about 5-8 minutes. Stir in salsa.Divide mixture over both tortillas. Sprinkle each with reserved green onions, tomatoes and chopped chiles.In a medium bowl, beat eggs with salt and pepper to taste and Mexican seasoning. Melt 1/2 tablespoon butter in a fry pan and scramble and cook eggs until set. Divide and place on top of tortillas. Sprinkle cheese over eggs.Bake 1 to 2 minutes until cheese melts. Slice into 4 to 6 wedges. Serve with additional salsa and sour cream.Serves four.Nutrition values per serving: 574 calories, 38 g fat (20 g saturated), 30 g carbohydrates, 5 g fiber, 30 g protein, 450 mg cholesterol, 904 mg sodium.
