Steak Salad with Blue Cheese Dressing
1 pound cooked sirloin, flank or other beef, cubed
1 cup cooked new potatoes, quartered (3 to 4)
½ red onion, thinly sliced
½ cup chopped celery
1 cup grated carrots
½ cup sliced radishes
4-6 cups baby spinach
Blue Cheese Dressing (recipe below)
In a large bowl, combine the beef, potatoes, onion, celery, carrots, radishes and spinach. Toss well.
Divide mixture among 4 plates. Top each with about 2 tablespoons of dressing, or serve dressing on the side.
Serves four.
