Sherry Dijon Salad Dressing
2 cloves garlic, minced

teaspoon salt
3 tablespoons extra virgin olive oil
¼
teaspoon fresh tarragon or large pinch dry tarragon
1 teaspoon Dijon mustard
2 teaspoons honey
½
teaspoon sherry
1½
tablespoons white balsamic vinegar
In a large salad bowl mash the garlic with the salt. Add oil and tarragon. Let sit at least 30 minutes. Add mustard, honey, sherry and vinegar and whisk briskly.
Serve with light lettuce such as Bibb, leaf or baby greens or with artichoke hearts, tomatoes, radishes and cucumbers.
Serves four.
