Carrot Fritters

6 medium carrots, peeled and grated

2 eggs

1 tablespoon sugar

½

teaspoon salt

¼

teaspoon powdered ginger

¼

cup flour

4-5 tablespoons butter

In a large bowl, mix grated carrots with eggs, sugar, salt and ginger. Blend in the flour to make a batter the consistency of thick cream.

Melt a little of the butter in a heavy skillet over medium-low heat. Drop the batter by tablespoon into the pan. Press down slightly to flatten out. Fry for several minutes on each side until nicely browned. Drain on paper towels. Repeat with remaining butter and batter.

Serves four.
