Apple Cinnamon French Toast
10 tablespoons butter4-6 large baking apples, peeled, cored and sliced2 cups firmly packed brown sugar 1/4 cup dark corn syrup2 tablespoons honey1 teaspoon cinnamon4 large eggs1 1/2 cups milk1 teaspoon vanilla extract12 slices (about 1-inch thick) French bread slices (about 3-inch diameter, 1-pound loaf)The day before serving: In large skillet melt butter over medium heat. Add apple slices and cook, stirring occasionally, until tender. Add brown sugar, corn syrup, honey and cinnamon to apples. Cook until brown sugar is dissolved.Spray 9-by-13-inch pan with cooking spray. Pour apple mixture into pan and spread evenly.In a medium bowl, beat eggs with milk and vanilla until well mixed. Dip bread slices into mixture; allow slices to soak up mixture without getting soggy. Layer bread on top of apples. Cover with plastic wrap and refrigerate overnight.To cook: Pull casserole from refrigerator and remove plastic wrap. Heat oven to 375 degrees.Bake casserole 35-45 minutes. Top should be golden brown.
