Local Winfield BBQ brand launches new rub

Justin Potts of Winfield owns and operates Pasatiempo Barbecue and recently launched his first professionally co-packed barbecue rub, Down With the Swine.

It can be found locally at Wheaton Meat Co. and he is currently developing other retail partners.

With a base of maple sugar, bourbon-infused sea salt, and a sriracha kick, Down With the Swine is a pork rub, intended to enhance pulled pork, ribs, pork belly burnt ends, pork chops, and pork loins. It also works great on chicken, salmon, fish, and vegetables, and as some customers have found, to rim the glass for a Bloody Mary or margarita.

"I have developed all of my rubs to appeal to not just the hardcore barbecue guy, but also the everyday cook," Potts said. "Down With the Swine is the first of five rubs to be released over the next 18 months and it has a sweet-heat flavor profile that is very versatile, from the kitchen to the grill to the competition circuit."

Potts used Down With the Swine to win Best Pork at the 2019 Grill on the Hill Eggfest in Gaylord, Mich., as well as capture top three in both people's choice and judge's vote at The Ohio Eggfest in Columbus.

"It is very important to me to use high-quality ingredients that create unique flavors that I want to eat every day, rather than a mass-market product simply to make money," Potts said.

In addition to the growing line of rubs, Pasatiempo Barbecue offers local catering and house-cured cherry wood smoked bacon.
