All-In-One Turkey Burgers

1½ pounds ground dark meat pastured turkey

2 slices thick-cut pastured bacon, cut into ¼-inch dice

½ cup packed fresh cilantro leaves, chopped

1 scallion, minced

½ cup shredded zucchini

1 large pastured egg yolk

2¼ teaspoons chopped fresh thyme leaves

1 teaspoon ground cumin

½ teaspoon ground allspice

½ teaspoon ground ginger

1 tablespoon high-quality olive oil

2 tablespoons coconut oil (or Bulletproof Brain Octane oil, or MCT oil, see notes), divided

1 teaspoon coarse sea salt

Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine the turkey, bacon, cilantro, scallion, zucchini, egg yolk, thyme, cumin, allspice, ginger, olive oil, 1 tablespoon coconut (or other) oil, and the sea salt. Mix well until combined. Form into 4 patties and place on the baking sheet. Drizzle with remaining 1 tablespoon coconut (or other) oil.

Bake, uncovered, until the burgers are cooked through and register an internal temperature of 165 degrees; 35 to 40 minutes.

Makes 4 burgers

Notes: MCT oil is Medium Chain Triglyceride oil. Pastured eggs means eggs from chickens that are raised on pasture, instead of being kept in confinement and fed primarily grains. Pastured turkeys are raised the same as pastured chickens. Both may or may not be certified organic.

Nutrition values per serving: 353 calories (52.3 percent from fat), 20.5 g fat (9.8 g saturated fat), 1.4 g carbohydrates, 0.9 g sugars, 0.3 g fiber, 40 g protein, 196 mg cholesterol, 904 mg sodium.
