Alicia Ross' Favorite Apple Crisp

½ cup butter

⅓cup honey

2 cups old-fashioned oats

⅔ cup chopped roasted almonds

½ cup all-purpose flour

1 teaspoon cinnamon

½ teaspoon allspice

4 large Granny Smith apples, cored and thinly sliced

½ cup unsweetened apple juice (see Cook's Note)

Ice cream for serving, if desired

Preheat oven to 375 degrees. Spray a 9-inch deep-dish pie pan with nonstick cooking oil.

Microwave the butter and honey together on high for 1 minute or until butter is completely melted. Stir well. In a large bowl, combine the oats, almonds, flour, cinnamon and allspice. Pour the butter-honey mixture over and mix well. Mixture will be moist but crumbly.

Place half the apples in the bottom of the prepared pie dish. Sprinkle about half the oat mixture over apples. Top with remaining apples, mounding them to the middle. Top with remaining oat mixture. Place the pie pan on a parchment-lined rimmed baking sheet to catch any drips. Drizzle the apple juice over the top of the crisp. Place in the center of the oven and bake for 40 to 45 minutes or until topping is lightly browned. Turn off the oven. Carefully remove crisp from the oven, cover with foil and return to the warm oven to rest for 15 minutes. Serve with ice cream if desired.

Cook's Note: If you can't find unsweetened apple juice, use ¼ cup regular apple juice and ¼ cup water. Or, if you don't mind extra sweetness, you can use ½ cup of regular apple juice.
