Spinach Berry Salad with Signature House Dressing
Dressing
¼ cup olive oil
2 tablespoons balsamic vinegar
½ teaspoon honey
½ teaspoon Dijon mustard
1 clove garlic, minced
Salt and ground black pepper to taste
Salad
8 cups baby spinach or mixed greens
4 ounces crumbled goat, feta or blue cheese
1 cup pecans, toasted
1 pint fresh blackberries
Combine oil, balsamic vinegar, honey, Dijon mustard, garlic, salt and black pepper together in a glass jar with a lid. Replace lid and shake vigorously until thoroughly combined.
Toss together greens, cheese, pecans and blackberries. Drizzle with balsamic vinaigrette. Serve.
Cook's note: Can substitute homemade dressing for a favorite balsamic vinaigrette.
Serves four.
