Chefs on Chefs at The Clare

Although the saying is that “too many chefs spoil the broth” in this case, they were simply there to savor it. Forty chefs representing the Chicago Chefs of Cuisine Association attended a special dinner at The Clare this month where Executive Chef Hagop Hagopian prepared some of the very best of his impressive repertoire. The exquisite repast featured late summer corn soup with potato and basil, poached egg, lentil and mushroom salad; sous vide pork tenderloin, braised pork shank, soft polenta, ratatouille and more. This is typical to the fare enjoyed on a regular basis by residents of The Clare.

The Clare is a continuing care retirement community located at Rush and Pearson. Under the supervision of Food and Beverage Director Brian Hughes, and the culinary genius of Hagop Hagopian, The Clare provides a cuisine on par with Chicago’s best eateries. “Being in the Gold Coast means that our residents can step out for five-star dining within steps of our front door. Hagopian, who is trained in French cuisine, has been a chef for 15 years. He joined The Clare earlier this year and has consistently delighted the residents with his extraordinary creations. His peers who attended the Chicago Chefs of Cuisine Association event were impressed with, but not surprised by their meal. “Hagop is very passionate about his cooking,” said Jose Luna, owner of Trattoria 225 in Oak Park, and a long-time mentor of Hagopian. “He’s always been so hungry to learn and to excel.”
