Cold Ham and Cheese Casserole
1 teaspoon mustard
2 tablespoons low-fat mayonnaise
1 teaspoon apple cider vinegar
½ cup cooked rice, white or brown
¼ cup cubed cooked ham
2 tablespoons shredded cheddar
1 scallion, thinly sliced, to garnish
In a small bowl, stir together the mustard, mayonnaise and vinegar. Add the rice, ham and cheddar, then mix well.
Serves one.
