Wild Blueberry Applesauce Bars

2 cups oat flour

2 cups quinoa flour

2 tablespoons aluminum-free baking powder

½ teaspoon sea salt

½ teaspoon ground cinnamon

⅔ cup honey

2 cups soy milk

1 cup unsweetened applesauce

1 teaspoon vanilla extract

2 large eggs, lightly beaten

1½-2 cups dried blueberries

Chopped almonds, for garnish

Heat oven to 350 degrees. Lightly grease a 9-by-13-inch baking dish

In a large bowl, stir together flours, baking powder, salt and cinnamon. Stir in honey, milk, applesauce, vanilla and eggs and stir until well combined. Fold in dried blueberries.

Spread the mixture into prepared dish and bake 15 minutes, then sprinkle chopped almonds on top and bake for 35-40 minutes. Let rest for 10 minutes before cutting into squares.

Serves 16 to 20.
