Lemon Cream-Stuffed Gingerbread Whoopie Pies

Gingerbread cookies

1frac12; cups Silvana's All-Purpose Flour (see note)

2 tablespoons unsweetened cocoa powder

2 teaspoons ground ginger

1 teaspoon pumpkin pie spice

1frac12; teaspoons baking powder

frac12; teaspoon baking soda

frac12; teaspoon salt

frac12; cup vegetable oil

frac12; cup packed light brown sugar

3 tablespoons unsoldered molasses

1 large egg, at room temperature, lightly beaten

Filling

6 tablespoons all vegetable shortening, at room temperature

1frac12; cups confectioners' sugar, sifted

1frac12; tablespoons fresh lemon juice

Heat the oven to 350 degrees. Line two baking sheets with parchment paper.
