Root Beer BBQ Glaze

1 liter root beer

1 whole orange peel

2 slices fresh ginger (about 1 tablespoon)

cup dark brown sugar

1 tablespoon ground ancho chile powder

¼

red onion, finely minced, optional

1 clove garlic, minced, optional

1-2 jalapenos, minced, optional

About 1 cup prepared barbecue sauce

In a heavy saucepan combine rootbeer, orange peel, ginger, brown sugar, chili powder and, if using, the onion, garlic and jalapeno. Bring to a low boil, then reduce to very slow simmer. Cook until reduced to syrupy consistency, about 30 minutes. Sauce should coat the back of a spoon. Discard ginger and orange peel and measure sauce.

Stir in an equal amount of prepared barbecue sauce. Use as a glazing or finishing sauce, not during cooking as it will burn. Use on ribs and chicken.

Covers 2 chickens, cut up, or 2 full slabs ribs, with extra for dipping.
